- Preheat oven to 300F
- Shred spinach finely with a grater, mix with finely chopped scallions, parsley, and salt. Let stand a few minutes, then squeeze out all excess moisture by the handful.
- Heat olive oil in large skillet. saute onions until transparent. stir in spinach and cheeses. allow spinach to cook down. remove from heat and cool to room temp, stirring occasionally. beat eggs into mixture.
- Brush 9″x13″ casserole dish with melted butter. put a layer of filo dough down, and brush with butter. add another layer of filo dough, then brush with a thin layer of butter. use 7-10 layers for bottom crust.
- Spread spinach mixture. layer filo as with the bottom crust, using the remaining dough (7-10 layers). brush top layer with butter.
- Bake at 300F for 1 hour or until top layer is crisp and delicately browned.
