Rice Custard Pudding

  • 4 cups milk
  • 7 eggs
  • 1 cup sugar
  • 2 1/2 teaspoons vanilla​
  • 1/2 teaspoon salt
  • 2 cups cooked rice
  • nutmeg

  1. While rice is cooking, heat milk on medium heat.
  2. Beat eggs, add sugar, salt and vanilla.
  3. When milk is hot (not boiling) take off stove. Add the cooked rice, then slowly add the egg mixture. Taste to see if it is sweet enough. The rice takes some of the sugar taste.
  4. Put casserole dish into a baking dish with an inch of water in it.
  5. Bake at 350 degrees for 1 hour.
  6. Stir mixture a couple times during the hour so the rice gets mixed well in the milk. When you stir it the last time sprinkle the top lightly with nutmeg and continue baking.
  7. Will be done when a dinner knife inserted in middle comes out clean. Baking time really depends on the size of your baking or casserole dish. You can’t go wrong. You can use more or less rice, just sweeten accordingly. Any left over rice will be eaten by the Becker family quickly.  Love you, Grandma
