Banana Bread

2 large bananas, mashed
1/2 cup oil
1/4 cup and 1 tablespoon buttermilk
1 teaspoon vanilla
1 cup nuts (optional)
1 3/4 cup flour
1 1/2 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs, beaten
Mix and pour into a greased 9 3/4 x 6 pan
Bake at 325 for 1 hour and 20 minutes
Let sit on rack for 10 minutes, then slide a knife around the edges of the bread
